The earliest known dedicated cheese course is said to be from the 1870 menu of Cafe Voisin in Paris. 42 years later, according to Les Livres des Menus in 1912, the idea of an end-of-meal cheese course was still a rarity, and the earliest known cheese board itself may have been in 1916 at a Paris luncheon, which concluded with a course of Roquefort, Port Salut, and Gruyere. Charcuterie, too, has its origins in France, translating loosely to "fancy cured meats", and the French term for the chef who prepares the meat is "Charcutier".
Well, we've come a long way, and in 2022, the cheese and charcuterie board has become an essential part of every dinner or event at which wine is served, as well as being a menu option at every self-respecting French cafe!
